The brasserie runs a tight menu — dry-aged cuts, a couple of seafood mains, one vegetarian dish we'd put against anyone's, and a dessert trolley that comes to you. Everything's cooked in-house by a kitchen that answers to the floor, not a franchise manual.

- Breakfast for guests from 07:00, cooked to order
